Carrot mezhukkupuratti


Carrot Mezhukkupuratti/ Carrot Stir Fry / Thoran is a vegetable dish prepared using carrot and grated coconut. It is a simple to made recipe with little time and is popular along the south side of India.

Ingredients
Carrot-3 medium
Dry Red chilli-2
Shallots-10Curry
leaves-2 strings
Salt-to taste
Turmeric powder-2 pinch
Coconut oil-2tbsp
Method
Peel and cut carrot in to long thin pieces .
Wash ,drain and keep aside .
Crush shallots,dry chilli together .
Heat coconut oil in a nonstick pan and add crushed mix along with curry leaves.
Saute until the raw smell goes.
Then add turmeric powder and salt ,sauté for few seconds .
Then  add carrot and mix well .
Then close the pan and cook for 10 minutes in low flame.
After that open the pan and stir the carrot in low flame for another 5 minutes .
If ur carrot not sweet enough ,u can add pinch of sugar to enhance the taste .
So the very easy and healthy carrot mezhukkupuratti is ready to serve .
It is the best combination with rice.

Chef's Note

Kindly do not grate the carrots too finely.
