Chicken chuttathu (grilled) in clay pot

Chicken chuttathu has a spicy tasty since it is prepared in Kerala style with a different preparation method. This dish is prepared by marinating the chicken using Kerala spices. Grilling the chicken covered in banana leaves and clay coating makes a unique, juicy and unbelievably delicious roast chicken which keeps all the flavours inside.

The whole chicken is wrapped in a plantain (banana) leaves and covered in fresh clay. Then the packet is put over the fire for roasting.


Ingredients

Whole Chicken
Ginger 
Garlic
Salt
Lemon
Chicken tikka masala
Chicken tandoori masala
Chilly powder
Turmeric powder
Coriander powder
Pepper powder
Yogurt

Method

Make some marks with knife on the cleaned whole chicken with skin on and set it aside. This will make the meat to get spices inside.

Prepare the marinade by mixing the red chilli powder, pepper powder, coriander powder, turmeric powder, ginger and garlic paste, lemon juice, and salt as required

Add coconut oil to the above marinade and mix all items well to create a smooth masala paste.

Marinate the set aside chicken with the above masala mix. Rub the marinade all over the chicken inside as well, to get maximum flavour.


Put the chopped coriander leaves over the marinated chicken. Stuff the inside of chicken also with coriander leaves.

Nex step is wrapping the chicken with two layers of plantain (banana) leaves and then wrap securely in aluminium foil. Make sure that aluminium foil is not broken.

Mix clay/mud into smooth formation by adding water as required. Wrap the above prapared chicken packet with this clay coating in 1 inch thickness. (Make sure that clay coating is not too thick, since the chicken will not get get cooked if the thickness of clay is too much)

Burn the firewood and once the fire is stopped and coal is ready, place the clay coated chicken packet over the fire. Cover the packet with coal fire.

The chicken would get cooked in the clay pot for about one and half hours.

Take out the chicken from clay coating by breaking it and serve the juicy chicken along with Khuboos, Hammous and Garlic paste.

This is different version of Alfaham Chicken. Alfaham is the traditional Arabian grilled chicken which comes in different flavours like green chilli, pepper and regular hot and spicy.
