Chicken and veg pilau 

INGREDIENTS:-
1 baby chicken cut into little pieces, wash and leave to drain. (You can use 3 chicken fillets cut into cubes)
Then marinate with pinch of salt, turmeric and garam masala.-
3 cups basmati rice,
wash and leave to drain on a colander.
1 cup frozen mixed vegetables.
4 table spoon oil and 2 tbsp ghee to cook the chicken-3 table spoon ghee for frying the rice-3 medium onions finely chopped-1 tsp minced garlic -1 tsp minced ginger-few green chillies -
1 tbsp salt or add according to your taste.
1 tsp garam masala-
1 tsp cumin powder-
1 tsp coriander powder-
1/2 tsp curry powder (optional)-
2 bay-leaf-3 cardamons-1 cinnamon sticks 3 inch long.-2 star anise -1 tsp mustard seeds

METHOD:

1) heat the 4 tbsp oil and 2 tbsp ghee, add the mustard seeds and let it pop then add the bay-leaf, cardamon, cinnamon and star anise and let the flavours get in the oil. 
2) add ginger and garlic and fry onions until golden.
3) add the salt and spices cook for 2 mins stirring,
4) add the chicken, and cook on high heat stirring for 5 mins.Cover and simmer for 20 mins.
5) in a frying pan heat the 3 tbsp ghee and add the rice and fry for 5 mins stirring.
6) add the rice, green chillies and mix frozen vegetable to the chicken and stir for 2 mins.
7) add enough boiling water so it's 1 inch above the rice and let it cook on high heat.Once the water goes down give it a stir, cover and cook on lowest heat until rice is cooked.
8) let it rest for 10 mins then fork the rice to fluff and serve.
