Short bread biscuit

 - 1/2 cup butter
1/4 cup caster sugar, plus extra to sprinkle on top
-1 1/2 cup plain flour

Method

1. Heat the oven to 190C/Gas 5.
2. Cream the butter and the sugar together 
3. Stir in the flour
4. Using your hands knead the mix together into a smooth ball. Roll out to about 1/2 cm thick.
5.Cut into equal size fingers and place them on a baking tray.
6. leave in the fridge for 20 minutes.
7. Sprinkle some sugar on top and bake for 20 minutes, or until light golden-brown.
8. cool on a wire rack.
