How to make brinjal thoran

Ingredients

Brinjal                         2 large(cut into
                                    small pieces)
Onion                          1 nos
Green chilly                3
Coconut                      3 tbspn   gratd
Turmeric pwdr            1/2 tspn
Salt                              as reqd
Coconut oil                  3 tsp
Mustard seed              1 tsp
  
Method

Heat coconut oil in a nonstick pan and add mustard seeds and add the onion

Saute until the raw smell goes.

Then add turmeric powder and salt ,sauté for few seconds .

Then add brinjal and mix well .

Then close the pan and cook for 10 minutes in low flame.

After that open the pan and stir the brinjal in low flame for another 5 minutes and add the coconut grated.

Mix well

So the very easy and healthy brinjal thoran is ready to serve .

It is the best combination with rice
