Ingredients for English-Muffin Egg Pizzas

4 English muffins
olive oil
tomato slices
2 hard-cooked eggs, sliced
grated mozzarella
oregano
kosher salt

Directions for Cooking

  1. Toast English muffin halves to little brown and spread with pizza sauce.
  2. Using a round microwavable dish to put the English muffin, then spray olive oil lightly with cooking sprayer. 
  3. Now layer the muffin with tomato slices, hard-boiled 1/2 egg slices on each, and a little grated mozzarella.
  4. Sprinkle with oregano and kosher salt.
  5. Heat Microwave on HIGH for 30 seconds. Top with cheese and microwave for an additional 30 seconds or until the cheese melts.
