Chemeen Pollichathu (Pan seared prawns)
Prawn Pollichathu is one more tasty dish of God's Own Country Kerala. This will make you slobber over your console. Prawns are marinated in wonderful flavors and tamarind squeeze, and cooked in coconut milk till the they've absorbed all the interesting masala they can.

Chemmeen Pollichathu is a tasty formula where prawns is gradually cooked in a tart and spicy coconut sauce enclosed by banana leaf. The uniqueness of this formula is because of the particular fragrance mixed by banana leaf that is utilized to cover the fish or the prawns masala. I have utilized tamarind as a souring agent. We can likewise utilize tomatoes or kudam puli (Garcinia cambogia also known as as well as brindleberry and Malabar tamarind).

Marinate the prawns with salt, chilli powder, turmeric powder, fennel powder, pepper powder and garlic paste mixture for in any event 30 minutes.

Grind the ginger, garlic cloves and green chillies in a processor for a couple of moments. Keep aside.

Warmth oil in a dish.

Tip in the marinated prawns.

Cook on high warmth till the prawns are fried. Drain the prawns from pan and keep aside.

In the same oil, include the curry leaves and cut shallots.

Saute till the shallots turn marginally darker.

Tip in the ginger-garlic-paste mixture blend.

Saute till the crude smell goes.

Include the bean stew, fennel, pepper and turmeric powders and fry for a moment.

Include the tomatoes and cook till oil isolates.  (you can add tamarind juice instead of tomatoes)

Add salt to taste.

Pour the coconut milk and blend well.

Cook till the coconut milk is ingested.

Include the vinegar and blend well.

Switch off warmth.

Instructions to Assemble

Clean and wipe the banana leaves dry.

Wither the leaf by holding over the fire. Ensure the whole leaf is withered.

Apply a touch of oil on the focal point of the leaf.

Put a touch of masala blend and spot a couple of the singed prawns over the masala.

Spoon a touch of masala blend on top. You can make 3-4 layers.

Presently overlay the banana leaf to shape a package.

Secure the bundle with a string.

You can make more bundles with the rest of the prawn-masala blend.

Heat tawa or pan on low flame and pour little oil in it. When the oil is hot enough, put the banana leaf parcel on it and cook for 5 minutes for each side. Take out on a plate and open the bundle.

This dish goes very well with Rice or Kerala Nice Pathiri.
