Ingredients
Carrot-1
Green plantain-1
Beans-4
Drumstick-2
Long Beans-4
Vellarikka-1/4 cup
Yam(chena)-1/4 cup
Padavalanga-1/4 cup
Turmeric Powder-1/2tsp
Green chilly -4
Curry Leaves-few
Coconut Oil-2 tbsp
Curd-1/2 cup
Salt-to taste
Small Onions -8nos
Cumin seeds(jeera)-1/2tsp
Grated Coconut -1
Method:
At first wash and cut all the vegetables length wise that is about 1 inch length .
Put all the vegetables into a non stick kadai and add turmeric powder, ,salt ,curry leaves , green chilli slits (2) 1tsp of coconut oil and water upto 3/4 of the vegetables.
Close the kadai and cook the vegetables in a medium heat.
Stir Occasionally .
When done keep aside .
Check the saltIn a blender at first add grated coconut and cumin seeds.
Give a quick blendThen open the jar and add remaining green chilli ,chopped small onions ,curry leaves , very little turmeric powder and salt .
This time also give a quick blend.
We don`t want our coconut mix to become a fine paste .
It should be like we blend for thoran .
To this coconut mix add curd and mix well.
Then switch on the gas and place the cooked vegetables .
Then add this coconut curd mix to the cooked vegetables and gently mix .
Then using a spoon gently press the avial and cook for few minutes in low flame till the steam comes .
At this time if u want u can add crushed onion and green chilli on the top.
Finally sprinkle coconut oil and few chopped curry leavesClose the pan immediately and let it be like this 5 to 10 minutes .
Thrissur style avial is ready to serve.
