Baba Ghanoush Recipe


Baba ghanoush is a delicious dip that's best served up with pitta bread or a chopped raw vegetable platter. It is packed with complex flavours and has a lovely smokiness from oven baking the eggplant,  its central ingredient.

Ingredients 
1 eggplant 
1/4 cup tahini
2 garlic cloves
3 tablespoons lemon juice
Parsley 
Pomegranate
Olive oil
1/4 tablespoon of salt

Preparations 

1. Preheat oven to 200 C
2. Wrap the eggplant in foil
3. Bake for 45 mins until soft. 
4. Unwrap. Leave to cool for 10 min
5. When cool, cut top off and peel away  skin. Discard skin
6. Put flesh in processor,add garlic,lemon juice, tahini, 1/4 teaspoon of salt
7. Blend till creamy and smooth
8. Garnish with chopped parsley, pomegranate seeds and toasted pitta
